Bacon Dill Potato Salad

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 10
  • 2 lbs idaho potatoes, peeled and diced (about 5 cups)
  • 1/2 cup mayonnaise (or light mayonnaise)
  • 2 tablespoons cider vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup chopped hard-boiled egg
  • 2 tablespoons chopped fresh dill
  • 1/2 cup chopped scallion
  • 5 slices bacon, cooked and chopped

Recipe

  • 1 boil potatoes for 13-15 minutes or until potatoes are tender. drain.
  • 2 in a large bowl combine mayonnaise, vinegar, salt and pepper. add remaining ingredients. toss and coat thoroughly.
