Blackberry Avocado Salad With Balsamic Vinaigrette

Ingredients

  • Servings: 3
  • 1 tablespoon butter
  • 1 cup pecan halves
  • 6 cups torn mixed greens
  • 2 cups fresh blackberries
  • 1 ripe avocado, peeled, pitted and cubed
  • 3 tablespoons crumbled goat cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 small garlic clove, minced
  • 1/2 teaspoon dijon-style mustard
  • 1/4 teaspoon sea salt (or to taste)
  • 1/4 teaspoon fresh ground black pepper (or to taste)

Recipe

  • 1 melt butter in a small skillet over medium heat. saute pecans until lightly browned. set aside until cool.
  • 2 to make dressing, whisk all dressing ingredients together and set aside.
  • 3 place all salad ingredients in a large bowl and gently toss to combine. pour dressing over salad and gently toss to coat.
