Artichoke Rice Salad

Ingredients
- Servings: 4
- 2 tablespoons oil
- 1 teaspoon lemon juice
- 1 cup chickpeas, drained and rinsed
- 1 cup cooked rice
- 1 (6 1/2 ounce) jar marinated artichoke hearts, drained and quartered
- 1 medium ripe avocado, peeled and chopped
- 1/2 cup chopped green pepper
- 1/2 cup chopped sweet red pepper
- 1 medium tomato, chopped
- salt and pepper
Recipe
- 1 in a large bowl combine oil and lemon juice.
- 2 stir in remaining ingredients. (ps: i don't like peppers, so i don't use.).
- 3 cover and chill before serving.
