Artichoke Rice Salad

Ingredients

  • Servings: 4
  • 2 tablespoons oil
  • 1 teaspoon lemon juice
  • 1 cup chickpeas, drained and rinsed
  • 1 cup cooked rice
  • 1 (6 1/2 ounce) jar marinated artichoke hearts, drained and quartered
  • 1 medium ripe avocado, peeled and chopped
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet red pepper
  • 1 medium tomato, chopped
  • salt and pepper

Recipe

  • 1 in a large bowl combine oil and lemon juice.
  • 2 stir in remaining ingredients. (ps: i don't like peppers, so i don't use.).
  • 3 cover and chill before serving.
