Artichoke Salad

Ingredients

  • Servings: 4
  • 2 (14 ounce) cans artichoke hearts, drained, quartered
  • 1/2 cup roasted red pepper, chopped
  • 1/4 cup chives, chopped
  • 1/4 cup parmesan cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon oregano

Recipe

  • 1 combine artichokes, red peppers, chives, parmesan cheese, olive oil, and oregano.
  • 2 chill for one hour.
