Ingredients

- 2 cups finely diced celery
- 1/2 cup dried cherries
- 1/2 cup crumbled blue cheese
- 1 tablespoon lemon juice
- 1 -2 tablespoon olive oil
- salt and pepper
- 4 cups arugula, spinach or 4 cups sorrel, leaves cut in thin strips
Recipe
- 1 combine celery, dried cherries and blue cheese in a bowl. add lemon juice, olive oil, salt and pepper to taste. toss gently.
- 2 serve on small mounds of greens.
