Barley Salad With Tomatoes And Corn

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 1 cup pearl barley
  • 1 cup basil leaves, tightly packed
  • 3/4 cup parmesan cheese, grated
  • 1/3 cup olive oil
  • 2 garlic cloves, minced
  • 3 cups cherry tomatoes, halved
  • 2 cups corn kernels
  • salt and pepper

Recipe

  • 1 boil large pot of water, add barley.
  • 2 reduce heat, cover, simmer 50 minutes till tender.
  • 3 drain and rinse under cold running water.
  • 4 in food processor, puree basil, cheese, oil and garlic.
  • 5 season to taste.
  • 6 in bowl, toss basil mix through barley.
  • 7 add corn and tomatoes.
  • 8 can be made 2 days ahead and refrigerated.
