Ingredients

- 12 ounces corn
- 4 scallions, chopped
- 1/3 cup green pepper, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/2 tablespoons mayonnaise, such as helman's
- 1 hass avocado, cubed
- 2 plum tomatoes, diced
Recipe
- 1 combine all ingredients except the avocado and tomato.
- 2 chill corn mixture for at least an hour or until serving time.
- 3 just before serving toss in avocado and tomato.
