Amanda's Favorite Minty Watermelon Salad

Ingredients

- 1 medium watermelon, cut into 1-inch chunks
- 1 pint raspberries
- 1 pint blueberries
- 1 pint strawberry, hulled and halved
- 2 cups seedless grapes, halved
- 1/4 cup sugar
- 1/4 cup water
- 1/4 cup chopped fresh mint
- 1/2 teaspoon ground ginger
- fresh mint leaves, to garnish if desired
Recipe
- 1 chunk watermelon, hull and half strawberries and half grapes.
- 2 for syrup: in small saucepan combine sugar, water, mint and ginger. bring to boil; reduce heat and simmer 5 minutes to thicken slightly. set aside to cool.
- 3 put all the fruit in a large bowl and add syrup mixture. toss to coat.
- 4 garnish with mint leaves and serve immediately.
