Amanda's Favorite Minty Watermelon Salad

Total Time: 35 mins Preparation Time: 30 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 1 medium watermelon, cut into 1-inch chunks
  • 1 pint raspberries
  • 1 pint blueberries
  • 1 pint strawberry, hulled and halved
  • 2 cups seedless grapes, halved
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 cup chopped fresh mint
  • 1/2 teaspoon ground ginger
  • fresh mint leaves, to garnish if desired

Recipe

  • 1 chunk watermelon, hull and half strawberries and half grapes.
  • 2 for syrup: in small saucepan combine sugar, water, mint and ginger. bring to boil; reduce heat and simmer 5 minutes to thicken slightly. set aside to cool.
  • 3 put all the fruit in a large bowl and add syrup mixture. toss to coat.
  • 4 garnish with mint leaves and serve immediately.
