Barley And Bean Salad

Ingredients
- 1 cup raw barley, rinsed and cooked
- 1 (15 ounce) can small beans, rinsed and drained (or any other beans)
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 medium cucumber, peeled, seeded and chopped
- 1/4 cup minced red onion
- 1/2 cup chopped red bell pepper
- 1 medium carrot, shredded
- 2 tablespoons fresh parsley, minced
- 1/2 cup prepared italian dressing (i used good seasons)
Recipe
- 1 mix all together in medium bowl. serve. refrigerate leftovers.
