Bok Choy Salad

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 bok choy
  • 1/4 cup scallion
  • 1 lb chicken, cooked and cubed or 1 lb canned chicken
  • 2 (3 ounce) packages ramen noodles, crushed, spice packs discarded
  • 1/4 cup slivered almonds
  • 1/4 cup sesame seeds
  • 1/4 cup butter
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 tablespoon soy sauce
  • 1/2 cup sugar

Recipe

  • 1 1. thinly slice scallions, bok choy leaves and stems.
  • 2 2. melt butter in a frying pan, add slivered almonds and crushed ramen noodles. brown ingredients, part way through, add sesame seeds and continue to brown. approx 5 minutes.
  • 3 3. mix oil, red wine vinegar, soy sauce and sugar.
  • 4 4. in a large bowl, combine all ingredients. enjoy.
