Bok Choy Salad

Ingredients

- 1 bok choy
- 1/4 cup scallion
- 1 lb chicken, cooked and cubed or 1 lb canned chicken
- 2 (3 ounce) packages ramen noodles, crushed, spice packs discarded
- 1/4 cup slivered almonds
- 1/4 cup sesame seeds
- 1/4 cup butter
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1 tablespoon soy sauce
- 1/2 cup sugar
Recipe
- 1 1. thinly slice scallions, bok choy leaves and stems.
- 2 2. melt butter in a frying pan, add slivered almonds and crushed ramen noodles. brown ingredients, part way through, add sesame seeds and continue to brown. approx 5 minutes.
- 3 3. mix oil, red wine vinegar, soy sauce and sugar.
- 4 4. in a large bowl, combine all ingredients. enjoy.
