Autum Grain Salad

Ingredients

- 1 tablespoon extra virgin olive oil
- 1 cup diced butternut squash
- 1/2 cup diced red onion
- 1/2 cup diced yellow bell pepper
- 1/4 cup toasted sunflower seeds
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
- 1 cup cooked wheat berries
- 1 cup cooked cracked bulger wheat
- 1 cup chopped green beans, blanched
- 3/4 cup sliced kalmata olive
- 1 granny smith apple, diced
- 1 tablespoon lemon juice
- 2 tablespoons wine vinegar
Recipe
- 1 in a large saute pan over medium heat add the olive oil and butternut squash.
- 2 saute for 3 to 4 minutes stirring often.
- 3 mix in the onion, bell pepper and sunflower seeds.
- 4 saute for 3 to 4 minutes.
- 5 remove from heat.
- 6 season with salt and pepper.
- 7 add remaining ingredients to pan.**.
- 8 toss well.
- 9 serve warm or at room temperature.
- 10 **after you dice your apple toss with lemon juice to prevent browning.
