Autum Grain Salad

Total Time: 38 mins Preparation Time: 30 mins Cook Time: 8 mins

Ingredients

  • Servings: 6
  • 1 tablespoon extra virgin olive oil
  • 1 cup diced butternut squash
  • 1/2 cup diced red onion
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup toasted sunflower seeds
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 1 cup cooked wheat berries
  • 1 cup cooked cracked bulger wheat
  • 1 cup chopped green beans, blanched
  • 3/4 cup sliced kalmata olive
  • 1 granny smith apple, diced
  • 1 tablespoon lemon juice
  • 2 tablespoons wine vinegar

Recipe

  • 1 in a large saute pan over medium heat add the olive oil and butternut squash.
  • 2 saute for 3 to 4 minutes stirring often.
  • 3 mix in the onion, bell pepper and sunflower seeds.
  • 4 saute for 3 to 4 minutes.
  • 5 remove from heat.
  • 6 season with salt and pepper.
  • 7 add remaining ingredients to pan.**.
  • 8 toss well.
  • 9 serve warm or at room temperature.
  • 10 **after you dice your apple toss with lemon juice to prevent browning.
