Bok Choy Quinoa Salad With Miso Dressing

Ingredients

  • Servings: 4
  • 2 cups cooked quinoa
  • 8 cups chopped bok choy
  • 1 tablespoon minced fresh ginger
  • 2 tablespoons rice vinegar
  • 1 1/2 tablespoons miso
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon agave nectar or 1 tablespoon honey
  • salt and pepper

Recipe

  • 1 in a large bowl combine quinoa and bok choy.
  • 2 in a small bowl, combine remaining ingredients. add to quinoa and toss gently to combine. let stand at least 10 minutes before serving.
