Black Beans And Corn With Salsa Dressing

Ingredients

- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup whole kernel corn, cooked
- 1 sweet red pepper, cut into 1/2 -inch pieces (3/4cup)
- 1 stalk celery & leaves, sliced (2/3 cup)
- 1 tablespoon cilantro or 1 tablespoon parsley, snipped
- lettuce leaf (optional)
- 1/2 medium avocado, pitted, peeled, and sliced (optional)
- 1/4 cup salsa
- 1/4 cup sour cream
- 1/4 cup mayonnaise
Recipe
- 1 mix the dressing.
- 2 stir together with the first 5 ingredients.
- 3 garnish with sliced avocado.
- 4 serve on lettuce leaves if desired.
