Black Beans And Corn With Salsa Dressing

Ingredients

  • Servings: 4
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup whole kernel corn, cooked
  • 1 sweet red pepper, cut into 1/2 -inch pieces (3/4cup)
  • 1 stalk celery & leaves, sliced (2/3 cup)
  • 1 tablespoon cilantro or 1 tablespoon parsley, snipped
  • lettuce leaf (optional)
  • 1/2 medium avocado, pitted, peeled, and sliced (optional)
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise

Recipe

  • 1 mix the dressing.
  • 2 stir together with the first 5 ingredients.
  • 3 garnish with sliced avocado.
  • 4 serve on lettuce leaves if desired.
