Anne's Pasta Salad (made Lighter)

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 8
  • 1 (8 ounce) box macaroni (cooked, drained and cooled)
  • 2 cups 2% cheddar cheese
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 2 shallots (sliced)
  • 1 cup light mayonnaise (i used fat-free)
  • 3 tablespoons sugar
  • 1/2 cup vinegar
  • 1 teaspoon black pepper

Recipe

  • 1 mix vegetables and cheese with macaroni.
  • 2 mix mayo, sugar, vinegar and black pepper.
  • 3 mix dressing with macaroni.
  • 4 allow to sit in fridge for about 30 minutes. this gets better the longer it sits.
  • 5 enjoy.
