Bean Salad

Ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can shoepeg corn, drained
- 1 (15 ounce) can black-eyed peas, rinsed and drained
- 1/2 medium red onion, minced (or to taste)
- 1 red bell peppers or 1 yellow bell peppers or 1 orange bell pepper, diced
- 1/4 cup red wine vinegar or 1/4 cup wine vinegar
- 1/4 teaspoon stevia (original 1/4 cup sugar)
- 1/4 cup olive oil (original 1/2 cup olive oil)
Recipe
- 1 mix all the beans together.
- 2 for the dressing, dissolve stevia in vinegar.
- 3 add oil.
- 4 mix well.
- 5 pour over beans.
- 6 mix and chill for 1-3 hours. overnight works even better.
