Bean Salad

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (11 ounce) can shoepeg corn, drained
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1/2 medium red onion, minced (or to taste)
  • 1 red bell peppers or 1 yellow bell peppers or 1 orange bell pepper, diced
  • 1/4 cup red wine vinegar or 1/4 cup wine vinegar
  • 1/4 teaspoon stevia (original 1/4 cup sugar)
  • 1/4 cup olive oil (original 1/2 cup olive oil)

Recipe

  • 1 mix all the beans together.
  • 2 for the dressing, dissolve stevia in vinegar.
  • 3 add oil.
  • 4 mix well.
  • 5 pour over beans.
  • 6 mix and chill for 1-3 hours. overnight works even better.
