Black 'n Bean Salad

Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped sweet red pepper
  • 1/4 cup chopped onion
  • 1/4 cup minced fresh cilantro or 1/4 cup parsley
  • 1/3 cup cider vinegar or 1/3 cup red wine vinegar
  • 1/4 cup olive oil or 1/4 cup vegetable oil
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • lettuce leaf (optional)

Recipe

  • 1 in a large bowl, combine the first six ingredients.
  • 2 in a small bowl, whisk vinegar, oil and seasonings.pour over bean mixture and toss to coat.
  • 3 cover and refrigerate until serving.
  • 4 using a slotted spoon, serve over lettuce leaves, if desired.
