Black 'n Bean Salad

Ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1/2 cup chopped cucumber
- 1/2 cup chopped sweet red pepper
- 1/4 cup chopped onion
- 1/4 cup minced fresh cilantro or 1/4 cup parsley
- 1/3 cup cider vinegar or 1/3 cup red wine vinegar
- 1/4 cup olive oil or 1/4 cup vegetable oil
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
- lettuce leaf (optional)
Recipe
- 1 in a large bowl, combine the first six ingredients.
- 2 in a small bowl, whisk vinegar, oil and seasonings.pour over bean mixture and toss to coat.
- 3 cover and refrigerate until serving.
- 4 using a slotted spoon, serve over lettuce leaves, if desired.
