Asian Style Cole Slaw

Ingredients

  • Servings: 4
  • 6 cups thinly sliced green cabbage (1/2 medium head)
  • 2 cups thinly sliced red cabbage
  • 1 small red bell pepper, diced
  • 1 small yellow bell pepper, diced
  • 3 medium carrots, peeled and shredded
  • 4 large green onions, diced
  • 1/2 cup chopped fresh cilantro
  • 1/3 cup chopped roasted peanuts
  • 1/3 cup rice vinegar
  • 1 tablespoon asian style sesame oil
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 tablespoons grated peeled fresh ginger
  • 1 1/2 tablespoons minced garlic
  • 1 jalapeno pepper, seeded and finely chopped

Recipe

  • 1 toss salad ingredients in a large bowl. dress immediately before serving to preserve crunchiness.
