Ingredients

- olive oil, for frying
- 1 banana shallot, finely chopped
- 3 ounces tinned anchovies, diced
- 1/4 cup balsamic vinegar
- chopped chives
- 2/3 cup extra virgin olive oil
Recipe
- 1 heat a little olive oil in a small frying pan and cook the shallot until softened. add the anchovies and cook for 1-2 minutes.
- 2 remove from the heat and transfer to a bowl. add the balsamic vinegar and chopped chives. pour in the extra virgin olive oil and mix together well.
