Anchovy And Balsamic Dressing

Ingredients

  • Servings: 2
  • olive oil, for frying
  • 1 banana shallot, finely chopped
  • 3 ounces tinned anchovies, diced
  • 1/4 cup balsamic vinegar
  • chopped chives
  • 2/3 cup extra virgin olive oil

Recipe

  • 1 heat a little olive oil in a small frying pan and cook the shallot until softened. add the anchovies and cook for 1-2 minutes.
  • 2 remove from the heat and transfer to a bowl. add the balsamic vinegar and chopped chives. pour in the extra virgin olive oil and mix together well.
