Black Bean Salad

Ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1/2 cup cucumber, chopped
- 1/2 cup sweet pepper, chopped
- 1/4 cup onion, chopped
- 1/4 cup fresh cilantro, minced
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
- 6 lettuce leaves (optional)
Recipe
- 1 in a large, bowl combine the beans, cucumber, red pepper, onion and cilantro.
- 2 in a small boiwl, whisk the vingar, oil and seasonings.
- 3 pour over bean mixture and toss to coat.
- 4 cover and refrigerate until serving.
- 5 using a slotted spoon, serve over lettuce if desired.
