Black Bean Salad

Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1/2 cup cucumber, chopped
  • 1/2 cup sweet pepper, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup fresh cilantro, minced
  • 1/3 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 6 lettuce leaves (optional)

Recipe

  • 1 in a large, bowl combine the beans, cucumber, red pepper, onion and cilantro.
  • 2 in a small boiwl, whisk the vingar, oil and seasonings.
  • 3 pour over bean mixture and toss to coat.
  • 4 cover and refrigerate until serving.
  • 5 using a slotted spoon, serve over lettuce if desired.
