Black Bean Salad

Ingredients
- 390 g black beans
- 1 1/2 cups frozen corn, defrosted
- 1/2 cup green onion, chopped
- 1 jalapeno pepper, chopped, not seeded
- 3 plum tomatoes, seeded and chopped
- 1 avocado, peeled, seeded, and cut into chunks
- 1/2 cup cilantro, chopped
- 1/4 cup basil, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon sugar (to taste)
- salt and pepper
Recipe
- 1 in a large bowl, combine the beans, corn, onions, jalapeno chili peppers, tomatoes, avocado, cilantro, basil, lime juice and olive oil.
- 2 add sugar and salt and pepper to taste. (the sugar will help balance the acidity from the tomatoes and lime juice.) chill before serving.
