Black Bean Salad

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • 390 g black beans
  • 1 1/2 cups frozen corn, defrosted
  • 1/2 cup green onion, chopped
  • 1 jalapeno pepper, chopped, not seeded
  • 3 plum tomatoes, seeded and chopped
  • 1 avocado, peeled, seeded, and cut into chunks
  • 1/2 cup cilantro, chopped
  • 1/4 cup basil, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon sugar (to taste)
  • salt and pepper

Recipe

  • 1 in a large bowl, combine the beans, corn, onions, jalapeno chili peppers, tomatoes, avocado, cilantro, basil, lime juice and olive oil.
  • 2 add sugar and salt and pepper to taste. (the sugar will help balance the acidity from the tomatoes and lime juice.) chill before serving.
