Black Bean And Corn Salad

Ingredients

  • Servings: 4
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon cumin
  • 1/3 cup chopped fresh cilantro
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (7 ounce) can corn, drained
  • 1/4 cup chopped sweet onion
  • 2 plum tomatoes, seeded and chopped
  • shredded monterey jack cheese, for topping (optional)

Recipe

  • 1 combine olive oil, vinegar, mustard, cumin and cilantro, set aside. combine beans, corn, onion and tomato. drizzle the dressing over the bean mixture. stir together gently to avoid breaking the beans. may be topped with shredded cheese if desired.
