Arugula And Egg Muscle Salad

Ingredients

  • Servings: 1
  • 2 cups baby arugula
  • 1/4 cup dried tart cherry
  • 1/2 red bell pepper, sliced into thin strips
  • 1 ounce goat cheese, crumbled
  • 2 hard-boiled eggs, sliced
  • 2 tablespoons honey mustard dressing (simple honey mustard salad dressing or use newman's own lighten up honey mustard dressing)

Recipe

  • 1 toss together arugula, cherries, and bell pepper strips; top with cheese and sliced eggs.
  • 2 drizzle with dressing.
