Arizona's Granny Smith Salad

Ingredients
- 2 cups field greens
- 1/4 cup gorgonzola
- 1/4 cup spiced pecans
- 1 granny smith apple, peeled, cored, and julienned
- 1/2 cup red grapes
- 5 tablespoons red wine vinegar
- 1 shallot, minced (about 2 tablespoons)
- 1 tablespoon dijon mustard
- 1/4 teaspoon sea salt
- 1/4 teaspoon fresh ground pepper
- 2 tablespoons extra virgin olive oil
Recipe
- 1 dressing.
- 2 combine vinegar and next 4 ingredients in a medium bowl. slowly whisk in oil until well blended. use immediately, or store in an airtight container in the refrigerator until ready to use; bring to room temperature, and stir or shake to mix.
- 3 salad.
- 4 mix greens, cheese, pecans, apples, and grapes together. toss.
- 5 pour vinegarette over salad.
