5-a-day Salad

Ingredients

  • Servings: 2
  • 2 cups assorted watercress or 2 cups spinach or 2 cups mixed salad greens
  • 1/4 cup alfalfa sprout
  • 1/4 cup tomato
  • 1/4 cup cucumber
  • 1/4 cup onion
  • 1/4 cup mushroom
  • 1/4 cup bell pepper
  • 1 tablespoon sunflower seeds
  • 1/4 cup nonfat cottage cheese
  • 1/4 cup grated cheddar cheese
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons tahini
  • salt
  • pepper

Recipe

  • 1 prepare dressing and set aside.
  • 2 arrange greens in bowl and top with remaining veggies.
  • 3 top with a dollop of cottage cheese and a sprinkling of cheddar.
  • 4 scatter sunflower seeds.
  • 5 dress salad and enjoy.
