Ingredients

- 2 cups assorted watercress or 2 cups spinach or 2 cups mixed salad greens
- 1/4 cup alfalfa sprout
- 1/4 cup tomato
- 1/4 cup cucumber
- 1/4 cup onion
- 1/4 cup mushroom
- 1/4 cup bell pepper
- 1 tablespoon sunflower seeds
- 1/4 cup nonfat cottage cheese
- 1/4 cup grated cheddar cheese
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoons tahini
- salt
- pepper
Recipe
- 1 prepare dressing and set aside.
- 2 arrange greens in bowl and top with remaining veggies.
- 3 top with a dollop of cottage cheese and a sprinkling of cheddar.
- 4 scatter sunflower seeds.
- 5 dress salad and enjoy.
