Broccoli-cauliflower-pea Salad

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • 3 cups broccoli, cut into very small florettes
  • 3 cups cauliflower, cut into very small florettes
  • 3 cups celery, diced
  • 1 (10 ounce) package frozen peas
  • 1 cup spanish peanut
  • 1 cup raisins
  • 1/2 cup diced red onion (optional)
  • 4 slices bacon, cooked and crumbled
  • 1 1/2 cups mayonnaise (light or fat free works fine)
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sugar or 1/4 cup sugar substitute
  • 1/4 teaspoon salt
  • 2 tablespoons grated onions (if you did not put red onion in above)
  • 1 -2 tablespoon vinegar or 1 -2 tablespoon seasoned rice vinegar

Recipe

  • 1 mix all salad ingredients together. in separate bowl, combine the dressing ingerdients and mix together with the salad fixings. this makes a salad suitable for a large potluck. cooking time is chilling time in the refrigerator.
