Adult Summer Fruit Salad

Total Time: 28 mins Preparation Time: 20 mins Cook Time: 8 mins

Ingredients

  • Servings: 8
  • 1/2 cup honey
  • 2 large limes, rind grated and juiced
  • 1 vanilla bean, halved lengthways
  • 4 peaches, halved, stones removed
  • 4 nectarines, halved, stones removed
  • 4 plums, halved, stones removed
  • 3 mangoes, peeled, diced
  • 250 g strawberries, hulled, halved
  • 250 g cherries
  • 150 g blueberries
  • 1/2 cup chilled vodka (optional)

Recipe

  • 1 combine 1 cup water, honey, lime rind and juice in a saucepan.
  • 2 scrape seeds from vanilla bean and add to pot along with the beans.
  • 3 place over high heat, bring to the boil.
  • 4 reduce heat, simmer for 5 minutes.
  • 5 transfer to jug and chill, remove vanilla pods.
  • 6 cut fruit into wedges. place in large bowl, add berries and cherries.
  • 7 add vodka to chilled syrup.
  • 8 pour syrup over fruit and stir gently to combine.
  • 9 keep in fridge till ready to serve.
