Black Bean/cucumber Salad

Ingredients

  • Servings: 4
  • 1 (15 ounce) can black beans (drained and rinsed)
  • 1 large cucumber (peeled and diced)
  • 1 tomato (diced)
  • 1/2 green pepper (diced)
  • 1 stalk celery (chopped)
  • 1/2 small red onion (chopped)
  • 1/8 cup olive oil
  • 1/8 cup balsamic vinegar
  • salt and pepper

Recipe

  • 1 mix all ingredients in a medium size bowl.
  • 2 cover and refrigerate for at least one hour.
