Ingredients

- 1 (15 ounce) can black beans (drained and rinsed)
- 1 large cucumber (peeled and diced)
- 1 tomato (diced)
- 1/2 green pepper (diced)
- 1 stalk celery (chopped)
- 1/2 small red onion (chopped)
- 1/8 cup olive oil
- 1/8 cup balsamic vinegar
- salt and pepper
Recipe
- 1 mix all ingredients in a medium size bowl.
- 2 cover and refrigerate for at least one hour.
