Black Bean And Corn Salad

Ingredients

- 1 (14 ounce) can corn, drained
- 1 (14 ounce) can black beans, drained
- 1 red bell pepper
- 1/2 red onion, chopped
- 1 poblano pepper, chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon cumin
- 2 tablespoons coriander
- salt and pepper
Recipe
- 1 drain water from corn. rinse black beans of their juice and mix with the corn, red pepper, red onion, poblano pepper and chopped cilantro.
- 2 chop vegetables. blend together with corn, black beans and cilantro.
- 3 in a bowl, combine olive oil, apple cider vinegar, cumin, coriander and salt and pepper.
- 4 toss with the salad and serve cool.
