Black Bean And Corn Salad

Ingredients

  • Servings: 6
  • 1 (14 ounce) can corn, drained
  • 1 (14 ounce) can black beans, drained
  • 1 red bell pepper
  • 1/2 red onion, chopped
  • 1 poblano pepper, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon cumin
  • 2 tablespoons coriander
  • salt and pepper

Recipe

  • 1 drain water from corn. rinse black beans of their juice and mix with the corn, red pepper, red onion, poblano pepper and chopped cilantro.
  • 2 chop vegetables. blend together with corn, black beans and cilantro.
  • 3 in a bowl, combine olive oil, apple cider vinegar, cumin, coriander and salt and pepper.
  • 4 toss with the salad and serve cool.
