Ingredients

- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups arugula or 4 cups watercress
- 4 ounces parmesan cheese
Recipe
- 1 in a serving bowl, combine oil, vinegar, salt and pepper. beat with a fork to blend. add arugula to bowl and toss to coat.
- 2 with a vegetable peeler, shave off very thin slices of parmesan and scatter over the top of the salad.
