Arugula Salad With Parmesan

Ingredients

  • Servings: 6
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups arugula or 4 cups watercress
  • 4 ounces parmesan cheese

Recipe

  • 1 in a serving bowl, combine oil, vinegar, salt and pepper. beat with a fork to blend. add arugula to bowl and toss to coat.
  • 2 with a vegetable peeler, shave off very thin slices of parmesan and scatter over the top of the salad.
