Basil Tomato Salad

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 2 teaspoons fresh basil or 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups cooked rice, cooled
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, seeded and chopped
  • 1 small red onion, chopped

Recipe

  • 1 in a small bowl whisk together oil, vinegar, basil, salt and pepper.
  • 2 add rice, tomatoes, cucumber and onion.
  • 3 toss. serve chilled.
