Apple And Fennel Salad

Ingredients

  • Servings: 2
  • 6 tablespoons olive oil
  • 3 tablespoons sherry wine vinegar
  • salt
  • 4 ounces manchego cheese
  • 1 fennel bulb
  • 2 granny smith apples
  • 2/3 cup chopped walnuts, toasted
  • 2 tablespoons chopped chives
  • 8 small fennel leaves

Recipe

  • 1 in a large bowl, whisk together olive oil and vinegar. season with salt to taste.
  • 2 cut the manchego into thin batons. halve and core the fennel and slice it thinly lengthwise. place the cheese and fennel in the bowl with the vinaigrette.
  • 3 core and halve the apples. dice the first one into small cubes and slice the second one thinly lengthwise. add to bowl, along with the walnuts.
  • 4 add chives, toss salad, and garnish with fennel fronds. taste and adjust seasoning, if necessary. serve.
