- 3 ripe avocados
- 1 (15 1/4 ounce) bag frozen corn kernels
- 3 roma tomatoes
- 1 -2 teaspoon balsamic vinegar
- 1 teaspoon lemon juice
- salt and pepper
Recipe
- 1 allow corn to thaw. slice avocados in half and remove pit. slice avocado into cubes or small chunks. cut tomatoes into small chunks, discarding the seeds and pulp. mix all ingredients together. allow to chill for about 30 mins before serving.
