Blue Cheese Pasta Salad

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 cups uncooked penne pasta
  • 1 cup plain nonfat yogurt
  • 2 tablespoons low-fat mayonnaise
  • 2 ounces blue cheese, finely crumbled
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 1 (12 ounce) round steaks, trimmed of all fat,thinly sliced
  • 1/2 pint cherry tomatoes, halved

Recipe

  • 1 cook pasta according to package directions.
  • 2 meanwhile,combine yogurt,mayonnaise,blue cheese,salt and pepper in large bowl.
  • 3 heat large non-stick skillet,swirl in oil,then add garlic.
  • 4 saute 30 seconds.
  • 5 add beef in two batches,cook til just browned,about 2 minutes.
  • 6 drain pasta,add to bowl with yogurt dressing.
  • 7 add steak and tomatoes,toss to coat.
  • 8 serve immediately.
