Blue Cheese Pasta Salad

Ingredients

- 2 cups uncooked penne pasta
- 1 cup plain nonfat yogurt
- 2 tablespoons low-fat mayonnaise
- 2 ounces blue cheese, finely crumbled
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 2 teaspoons olive oil
- 1 clove garlic, minced
- 1 (12 ounce) round steaks, trimmed of all fat,thinly sliced
- 1/2 pint cherry tomatoes, halved
Recipe
- 1 cook pasta according to package directions.
- 2 meanwhile,combine yogurt,mayonnaise,blue cheese,salt and pepper in large bowl.
- 3 heat large non-stick skillet,swirl in oil,then add garlic.
- 4 saute 30 seconds.
- 5 add beef in two batches,cook til just browned,about 2 minutes.
- 6 drain pasta,add to bowl with yogurt dressing.
- 7 add steak and tomatoes,toss to coat.
- 8 serve immediately.
