Blackberry Salad With Creamy Feta

Ingredients

  • 4 ounces feta cheese
  • 2 tablespoons olive oil
  • 6 -8 cups fresh blackberries (may also use blueberries)
  • 1/3 cup fresh mint leaves, large leaves torn
  • 2 tablespoons turbinado sugar (raw sugar)
  • 2 teaspoons lemon peel, finely shredded
  • 1 tablespoon olive oil
  • red pepper (optional)
  • 1 red onion, small, silvered
  • 3 tablespoons cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon salt

Recipe

  • 1 1, prepare quick pickled onions combining ingredients in bowl and let stand for stand at room temperature for 1 to 4 hours stirring occassionally.
