Artichoke Potato Salad

Ingredients

- 2 lbs red potatoes, cooked and cubed 
 
- 1 (14 ounce) can artichoke hearts, drained, rinsed, drained again and quartered 
 
- 1 small red onion, chopped 
 
- 1 1/2 cups cubed brick cheese or 1 1/2 cups monterey jack cheese 
 
- 1/2 cup crumbled blue cheese 
 
- 3/4 cup vegetable oil 
 
- 1/4 cup red wine vinegar or 1/4 cup cider vinegar 
 
- 2 garlic cloves, minced 
 
- 1 teaspoon dried rosemary, crushed 
 
- 1 teaspoon dill weed 
 
- 1/2 teaspoon salt 
 
- 1/4 teaspoon pepper 
 
Recipe
- 1 in a large bowl, combine potatoes, artichokes, onion and cheeses.
