Artichoke, Beet, And Carrot Salad

Ingredients

  • 3 jarred artichoke hearts, chopped
  • 1/2 red beet, raw, grated
  • 1/2 carrot, grated
  • 1/4 cup feta
  • 1 cup baby spinach
  • 2 tablespoons vinaigrette

Recipe

  • 1 mix first 4 ingrediets.
  • 2 serve on spinach leaves.
  • 3 top with vinaigrette.
