Ingredients
- 1 medium avocado, peeled and diced
- 1 cup garbanzo beans, drained, rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced onion rings
- 2 cups red leaf lettuce, bite-size pieces
- salad dressing (your favorite)
Recipe
- 1 in medium bowl, combine all ingredients except leaf lettuce and dressing. place 1/2 cup lettuce on each of 4 serving plates; top with 1/4 of avocado mixture. serve with your favorite dressing.
