- 2 cups baby spinach
- 1/2 cup fresh blueberries
- 1/2 cup cooked lentils, rinsed (canned)
- 1/4 cup walnuts
- 2 hard-boiled eggs, sliced
- 2 tablespoons honey mustard dressing (simple honey mustard salad dressing or use newman's own lighten up honey mustard dressing)
Recipe
- 1 toss together spinach, blueberries, and lentils; top with walnuts and egg slices.
- 2 drizzle with dressing.
