Baby Greens With Mustard Vinaigrette

Ingredients

- 4 hard cooked eggs
- 2 tablespoons honey dijon mustard (or 1 tbs honey & 2 tbs mustard)
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 2 tablespoons red wine vinegar
- 6 tablespoons extra virgin olive oil
- 3 large butter lettuce or 10 ounces mixed greens
Recipe
- 1 peel and chop eggs.
- 2 combine next 5 ingredients and process until smooth with a hand held blender (or shake in a jar).
- 3 place lettuce in a bowl, add dressing and eggs and toss gently.
- 4 serve on a plate or salad bowl.
- 5 garnish with chopped parsley.
