Baby Blue Spinach Salad

Ingredients

  • Servings: 6
  • 8 ounces baby spinach
  • 1 cup blueberries, washed
  • 1/2 cup sliced vidalia onion, use any sweet onion
  • 1/2 cup sliced almonds
  • 4 ounces crumbled gorgonzola, use favorite blue cheese
  • 3 tablespoons cider vinegar
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons dijon mustard
  • 1 -2 teaspoon sugar
  • 1 teaspoon tarragon
  • 1/4 teaspoon salt
  • fresh ground black pepper

Recipe

  • 1 in a large bowl, toss together the baby spinach, blueberries, onions, almonds, and crumbled gorgonzola cheese.
  • 2 in a small bowl, whisk together the vinegar, oil, dijon, sugar, tarragon and salt.
  • 3 pour dressing over salad and toss to coat.
  • 4 sprinkle with freshly ground black pepper.
  • 5 serve.
