Baby Blue Spinach Salad

Ingredients

- 8 ounces baby spinach
- 1 cup blueberries, washed
- 1/2 cup sliced vidalia onion, use any sweet onion
- 1/2 cup sliced almonds
- 4 ounces crumbled gorgonzola, use favorite blue cheese
- 3 tablespoons cider vinegar
- 1/4 cup extra virgin olive oil
- 2 teaspoons dijon mustard
- 1 -2 teaspoon sugar
- 1 teaspoon tarragon
- 1/4 teaspoon salt
- fresh ground black pepper
Recipe
- 1 in a large bowl, toss together the baby spinach, blueberries, onions, almonds, and crumbled gorgonzola cheese.
- 2 in a small bowl, whisk together the vinegar, oil, dijon, sugar, tarragon and salt.
- 3 pour dressing over salad and toss to coat.
- 4 sprinkle with freshly ground black pepper.
- 5 serve.
