Aubergine (eggplant) Salad

Total Time: 35 mins Preparation Time: 25 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 aubergines, cut into long strips
  • 2 onions, sliced
  • 2 tomatoes, sliced
  • 2 green chilies, sliced
  • 1 lime, juice of
  • 2 teaspoons maldive fish

Recipe

  • 1 fry the aubergines till golden brown.
  • 2 drain excess oil on clean paper napkins.
  • 3 toss the aubergine and the remaining ingredients, except the lime juice, into a salad bowl and mix well.
  • 4 squeeze the lime juice on top.
  • 5 mix well and serve.
