Blue Cheese Potato Salad

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 lbs potatoes
  • 1/4 cup dry wine
  • 2/3 cup mayonnaise
  • 2/3 cup sour cream
  • 1 1/2 tablespoons dijon mustard
  • 1 tablespoon cider vinegar
  • 4 ounces blue cheese, crumbled
  • 3 green onions, minced
  • 2/3 cup chopped celery

Recipe

  • 1 boil or steam potatoes until tender; drain; cool slightly.
  • 2 peel and cut into 1 inch pieces.
  • 3 transfer to large bowl.
  • 4 add wine, season and toss to coat.
  • 5 cool.
  • 6 combine all remaining ingredients, adjust seasoning; mix with potatoes.
  • 7 (can be prepared 1 day ahead, chilled. let stand 30 minutes before serving).
