Blue Cheese Chicken Salad Sandwiches

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 (12 1/2 ounce) can chicken meat, drained and rinsed or 1 1/2 cups chopped cooked chicken breasts
  • 3 tablespoons crumbled blue cheese
  • 3 tablespoons fat-free mayonnaise
  • 1 medium carrot, shredded
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped onions
  • 1 garlic clove, finely chopped
  • 1 pinch salt
  • ground black pepper
  • 6 slices sourdough bread or 6 slices dark rye sandwich bread, toasted

Recipe

  • 1 in a mixing bowl, combine the chicken, cheese, mayonnaise, carrot, celery, onion, garlic, salt and pepper to taste.
  • 2 stir to mix.
  • 3 spread on toasted bread.
