Blue Cheese Chicken Salad Sandwiches

Ingredients
- 1 (12 1/2 ounce) can chicken meat, drained and rinsed or 1 1/2 cups chopped cooked chicken breasts
- 3 tablespoons crumbled blue cheese
- 3 tablespoons fat-free mayonnaise
- 1 medium carrot, shredded
- 1/4 cup finely chopped celery
- 2 tablespoons finely chopped onions
- 1 garlic clove, finely chopped
- 1 pinch salt
- ground black pepper
- 6 slices sourdough bread or 6 slices dark rye sandwich bread, toasted
Recipe
- 1 in a mixing bowl, combine the chicken, cheese, mayonnaise, carrot, celery, onion, garlic, salt and pepper to taste.
- 2 stir to mix.
- 3 spread on toasted bread.
