Blue Apple Salad

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 6
  • 3 granny smith apples (julienned)
  • 1 cup blue cheese, crumbles
  • 1 lb cooked bacon (crumbled)
  • 1 cucumber (peeled and diced small or julienned)
  • 1 cup chopped walnuts
  • 1/2 cup chopped red onion
  • 1/2 cup craisins or 1/2 cup raisins
  • 1 lemon, juice of
  • 2/3 cup raspberry vinaigrette dressing

Recipe

  • 1 cook the bacon and crumble and set aside.
  • 2 julienne apples and toss with your lemon juice to prevent fruit from turning brown.
  • 3 toss in the remaining ingredients including bacon and top with dressing.
  • 4 chill and eat.
