Balsamic Brown Rice Salad

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 cups water
  • 1 cup brown rice
  • 1/4 cup red onion, diced
  • 1/2 cup celery, diced
  • 1/4 cup dried cranberries
  • 1/2 cup balsamic vinaigrette dressing
  • 1 tablespoon splenda sugar substitute, granulated (or sugar if you prefer)

Recipe

  • 1 in a saucepan, bring water to a boil.
  • 2 stir in rice, cover, and reduce heat to low.
  • 3 simmer for 45 to 60 minutes, or until done.
  • 4 transfer rice to a serving bowl.
  • 5 stir in onion, celery, cranberries, balsamic vinaigrette dressing, and splenda.
  • 6 cover, refrigerate, and serve cold.
