Barbecued Spicy Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 cup plain low-fat yogurt
  • 2 garlic cloves, crushed
  • 2 tablespoons green curry paste
  • 2 tablespoons lime juice
  • 600 g skinless chicken thighs or 600 g skinless chicken breasts, trimmed of fat
  • 1 cup plain low-fat yogurt
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh coriander
  • 1 tablespoon lime juice

Recipe

  • 1 combine the yogurt, garlic, curry paste and lime juice in a shallow bowl.
  • 2 place the chicken into the mixture and turn the chicken to coat it with the yogurt mixture.
  • 3 refrigerate for at least 30 minutes, preferably longer.
  • 4 remove the chicken from the marinade and barbecue for 15-20 minutes, turning once and spooning any remaining marinade over them as they cook.
  • 5 for the sauce, combine the yogurt, mint, coriander and lime juice.
  • 6 serve the chicken topped with a dollop of sauce.
  • 7 steamed rice or flat bread and a green salad go well.
