Barbecued Spicy Chicken

Ingredients

- 1 cup plain low-fat yogurt
- 2 garlic cloves, crushed
- 2 tablespoons green curry paste
- 2 tablespoons lime juice
- 600 g skinless chicken thighs or 600 g skinless chicken breasts, trimmed of fat
- 1 cup plain low-fat yogurt
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh coriander
- 1 tablespoon lime juice
Recipe
- 1 combine the yogurt, garlic, curry paste and lime juice in a shallow bowl.
- 2 place the chicken into the mixture and turn the chicken to coat it with the yogurt mixture.
- 3 refrigerate for at least 30 minutes, preferably longer.
- 4 remove the chicken from the marinade and barbecue for 15-20 minutes, turning once and spooning any remaining marinade over them as they cook.
- 5 for the sauce, combine the yogurt, mint, coriander and lime juice.
- 6 serve the chicken topped with a dollop of sauce.
- 7 steamed rice or flat bread and a green salad go well.
