Bok Choy Salad

Ingredients

  • Servings: 8
  • 1 bunch bok choy
  • 1 bunch green onion
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons low sodium soy sauce
  • 3/4 cup brown sugar (or less to taste)
  • 1/2 cup pdiced almonds
  • 1/4 cup sesame seeds
  • 3 tablespoons olive oil
  • 1 (50 ml) package mr noodles, crumbles (noodles only)

Recipe

  • 1 rinse and dry bok choy. break up leaves and chop stalks. chop green onion into medium-sized chunks,.
  • 2 combine dressing ingredients. boil for 2 minutes; allow to cool. brown noodle mix items in a frying pan.
  • 3 just before serving, combine the noodle mix and dressing with greens. serve immediately.
  • 4 makes 8 side-dish servings.
  • 5 note: you can change this just a little bit by reducing the sugar by 2/3 and adding chopped orange segments.
