Asian Noodle Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 8 ounces rice noodles
  • 3 -4 cups thinly shredded veggies such as carrots, zucchini, cabbage
  • 1/3 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup oil
  • 1/2 teaspoon ginger (preferably fresh)
  • 2 garlic cloves, minced
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon crushed red pepper flakes

Recipe

  • 1 while you are heating the water for cooking the pasta, prep veggies.
  • 2 follow directions on package for cooking pasta.
  • 3 while pasta is cooking, make sauce.
  • 4 steam or stir fry veggies, if needed.
  • 5 when pasta is done, and rinsed with cool water, combine with veggies and toss with sauce.
  • 6 serve room temperature or cold. enjoy!
