Apple And Cheese Salad

Ingredients

- 1 firm juicy eating apple
- 1 tablespoon lemon juice
- 1 stalk celery, chopped
- 1 ounce seedless raisins or 1 ounce craisins
- 1 ounce walnuts, roughly chopped
- 2 ounces cheese, of your choice, cut into cubes
- 2 tablespoons low-fat plain yogurt or 2 tablespoons greek yogurt
- 1 pinch cinnamon
- 1/4 teaspoon honey
Recipe
- 1 wash, but do not peel the apples, remove the core, quarter and then cut the apples into triangles or cubes, mix at once with the lemon juice.
- 2 add the celery, raisins or craisins, walnuts and cheese and mix together.
- 3 flavour the yogurt with a little cinnamon and honey and mix well, and then mix the salad and yogurt together.
- 4 put the salad in your lunchbox and refrigerate - or serve.
