Asparagus And Blue Cheese Pie

Total Time: 1 hr 15 mins Preparation Time: 40 mins Cook Time: 35 mins

Ingredients

  • 1 kg asparagus
  • 100 ml cream (not thickend)
  • 100 g blue stilton cheese, crumbled
  • 3 eggs
  • 4 spring onions
  • 5 sheets phyllo pastry
  • 1 tablespoon olive oil
  • salt and pepper

Recipe

  • 1 peel the asparagus from underneath the head towards the base and cut off the dry ends.
  • 2 bring a large pan of water, with a little salt, to boil.
  • 3 place the asparagus in the boilig water and cook for approximately 5 minutes.
  • 4 mix the cream, cheese, the eggs and the salt and pepper to taste in a bowl.
  • 5 preheat the oven to 200 *c.
  • 6 spray an oven dish with cooking spray.
  • 7 place phyllo pastry (one layer) in the oven dish.
  • 8 baste the pastry with olive oil and put on the next layer of pastry.
  • 9 repeat until all 5 sheets have been used.
  • 10 place asparagus spears in the dish alternating the direction of the heads from one side to the other.
  • 11 pour the cheese mixture over the asparagus.
  • 12 bake in the middle of the oven for 35 minutes or until golden brown.
  • 13 serve with a fresh tomatoe salad.
